WBJ: Hook Owner Plans For Butcher Shop

Jonathan Umbel, the owner of Hook and Tackle Box in Georgetown, is pursuing plans to open a butcher shop and restaurant, reports Missy Frederick of the Washington Business Journal.

The shop, probably two years away, is planned for 3249 M St. NW, on the same stretch as Hook and Tackle Box. The Mad Butcher, the concept's tentative name, would sell meat and offer a restaurant. Umbel hopes to put a big-name chef at the helm, according to the WBJ report.

Nice. Sounds like the butcher version of Black Salt. Can't wait to try it out.

This would be better news if there wasn't such massive (and loud) turnover in the kitchens at Hook and Tackle Box. That does not inspire confidence in the owner's future projects.

We need real butchers in DC. I would love a butcher shop.

Sounds like they are exactly copying "the butcher shop" in Boston's South End, which is a wine bar and restaurant along with a butcher shop. Maybe they should come up with their own ideas...I have never been impressed with Hook.

Too bad almost everyone of value has been fired or quit (or maybe good for them?). Full disclosure- I am one of those former employees. Umbel is an egomaniacal micromanager that co-opts others' ideas and energy to line his pockets. Read between the lines folks...Anyone catch the new Beamer before his Hamptons vaca last fall? Not hating the ride but this at a time when his kitchen staff's checks bounced and the waiters waited 3 or more days for a previous nights tips. Boycott any "Pure Hospitality" venture!
