Chef Five Bites: Rachael Harriman

Sou'Wester chef de cuisine Rachael Harriman began working for acclaimed chef Thomas Keller at The French Laundry as an intern in culinary school. She continued working with Keller for six years, with a stint in Paris mixed in, and helped him open Per Se in New York. In 2006, chef Eric Ziebold (also a Keller protégé) tapped Harriman to join his team as sous chef of CityZen, and last fall, Ziebold put her in charge of executing the down-home menu at the Mandarin Oriental's new restaurant, Sou'Wester.
