Chef Five Bites: David Varley

David Varley, executive chef of Michael Mina's Bourbon Steak in the Four Seasons, was awarded another title last weekend: Cochon 555's prince of pork. The New Jersey native bested the other four DC chefs in the pork-laden competition with a globally inspired plate featuring a bao bun, barbecue popcorn, pork belly, a twist on an Oreo made with pork lard, and a few other dishes. Varley has cooked at the Trump International Hotel and Tower and Bradley Ogden in Las Vegas. Here are his bites.

1. Citronelle lamb burger

2. Crispy shoat sandwich at Sou'Wester

3. Lamb and pistachio kebab at Morso Express

4. Charred onions and fonduta at 1789

5. Sam Gye Tang at To Sok Jib
