
David Varley, executive chef of Michael Mina's
Bourbon Steak in the Four Seasons, was awarded another title last weekend: Cochon 555's prince of pork. The New Jersey native bested the other four DC chefs in the pork-laden competition with a globally inspired plate featuring a bao bun, barbecue popcorn, pork belly, a twist on an Oreo made with pork lard, and a few other dishes.
