Derek Brown's serene cocktail lab Columbia Room is bringing back its guest chef series for a second round — this time it's pastry chefs who go behind the bar.
This summer, Derek invited several chefs to come cook at the Columbia
Room. The guest chef created two dishes that Derek paired with
cocktails, then the tables turned and the chef got to create a cocktail
for a final dish prepared by Derek.
I was there the evening chef Nick Stefanelli of Bibiana
served up cobia tartare with squid ink sorbet paired with a Corpse
Reviver cocktail, followed by a pork tasting with a Champagne and
bourbon concoction, and finally for the role-reversal course, local
white peaches and Greek yogurt matched up with a delicious pistachio
