• Despite Komi's
liquor license application requesting an expansion, chef Johnny Monis
tells me his 38-seat restaurant will remain unchanged as we know it. The
planned expansion is for much needed wine storage and office space, the
chef says.
• Bourbon Steak
head chef David Varley, who helped the Michael Mina property establish a
strong local connection, will be leaving at the end of this month to
become corporate chef for the Mina Group. Replacing him at the Four Seasons
restaurant is Adam Sobel, who was most recently executive chef at Rick
Moonen’s RM Seafood at Mandalay Bay in Las Vegas. His résumé also includes time at Vegas' Bradley Ogden and Restaurant Guy Savoy.
