Hill Country

Manhattan barbecue joint Hill Country is now serving its signature ribs, sausages, brisket, chicken and pork in a 13,000-square-foot space in Penn Quarter. The meats are slowly smoked over Texas oak and served by the pound on butcher's paper. Accompaniments include baked beans, chipotle deviled eggs and PB&J cupcakes.

wasn't a big fan of the one in NYC. I can see DC folks being confused about how to order (you order by weight...) i wish them luck.

Any place that gets shiner bocks specials by the pitcher is worth my money. Huge fan of the side items. Jalapeno laced potato salad was incredible.

Yeah, because no one works in government buildings or offices where cafeterias charge by the pound... For the prices they charge, give me Q instead.
