Chef 5 Bites: Orlando Amaro

Chef Orlando Amaro mans the kitchen at  Station 4 down near the Southwest waterfront. The native of Venezuela found his passion for cooking under the watchful eye of an Italian grandmother, who was a pastry chef. He attended the Culinary Institute of Mexico and eventually spent time in the kitchens at Restaurant Arzak and El Bulli in Spain. He joined Station 4 last summer.

1. Pulled pork sandwich at Black Hog in Frederick, Md. This is my favorite lunch spot in Frederick

2. Fish and chips at Ulah Bistro. I always leave happy!

3. Falafel at Zaytinya

4. Black paella seafood at Bodega Spanish Tapas

5. Veal sweetbreads at Fiola
