Toki chef Erik Bruner-Yang and Acqua al 2 chef Ari Gejdenson will be working with chef Johnny Spero, who will head the new kitchen. Spero has cooked at Komi and Town House in Chilhowie, Va.
The team previewed the concept at a Living Social pop-up restaurant. Highlights from the menu included kampachi tartare with preserved lemon and picked radish, and smoked duck with sunchokes and flowering herbs.
The name means "moss" in Latvian, a nod to Spero's heritage, but his modern menu will reflect more international influences.
